♡ Gut Healing Entry 3- Mini Sugar Detox ♡

Hey everyone!
It's time for a gut healing update. Honestly it was a rough week for my gut. I was having WAY too much sugar and things like squash are starting to bother me. I've had a lot of gut pain throughout the days all week. I've been taking remedies to help with it, and they do. BUT I don't want to HAVE to take them all the time.
Soo.. I'm starting a Mini Sugar Detox! Not only for my gut but also for my skin. I take care of my skin topically but the best thing I can do for my skin is to not have sugar. It makes my skin breakout EVERY time I have it.
I've also been overeating a lot this week. Which also has been making my gut hurt bad.

(Sugar) Foods I'm Not Having-

Stevia
Honey
Mable Syrup
Cane Sugar

(Sugar) Foods I Am Having-
Fruit
Coconut Sugar (made from coconut nector. I hear it doesn't count in your body as 'sugar'. If it does count PLEASE tell me)

So there is my gut update.

Gut Goals-
Don't overeat
Drink more water
NO sugar
Do tummy yoga (that helps digestion)

♡ Maple Shortcake (Paleo) ♡

This is the best paleo cake I have made so far. Even my dad and grandmother liked it!
Here is the original recipe. I changed it just a little and was very happy with how it came out. It taste like the shortcakes you get for strawberry shortcakes, but more mapley which I LOVE! And the great thing about these cakes is, they don't have that weird 'gritty' or mushy coconut flour texture. I think it's all the eggs, it uses a lot but it makes the texture like 'normal' cakes!
So let me tell ya how to make these little sweet morsels!

Ingredients-
6 eggs
1/4 maple syrup
1/4 coconut sugar
1/4 teaspoon baking soda
1/2 (a lil less) salt
heaping 1/2 cup coconut flour
1/2 teaspoon vanilla
1/2 cup coconut oil (I use a little less)
2 tablespoons apple sauce

Start by beating the eggs in a bowl with a hand mixer to get some air into the batter,
Put everything else (*ACCEPT THE COCONUT OIL AND COCONUT FLOUR) in the bowl and blend with a hand mixer,
Pour the mixture in a pot and heat on the stove over medium heat,
Add in the coconut oil into the warm batter (it needs to be warm so the coconut oil won't get hard and cause clumps of oil),
Pour the batter back in the bowl and mix in coconut flour (I know it sounds like a lot to do but it is very easy and SO worth it.)
Pour batter in greased pan (muffin tin, cake pan, or loaf pans) (I used muffin tin and loaf pan)
The original recipe said to bake for 35 minutes at 350. (So I just made these again and they were done in 15 minutes but the first time it took over 20. The first time I think the batter was a little thinner, so set your timer for 15 in case it doesn't take long.

I used a mixture of honey, coconut milk, vanilla, and coconut flour for the frosting, but it had a gritty texture so I'm still working on making a better frosting :P

I really hope yall try out these cakes. They are AMAZING!!

♡ June Empties- Hair, body, and food + Spending ♡

Here's my June Empties! :)

(* I'd repurchase)

Organix renewing shampoo- I actually wasn't crazy about this. It smelled like dog shampoo and it's not as natural as I like at all.
Toms Strawberry Toothpaste- I didn't like this. It felt my mouth feeling chalky and not very fresh.
Body Cology Cherry Blossom Lotion- Not a great lotion and NOT natural :P
* A Southern Lady Skincare Mint Soap (sample)-  I really liked this! It smelled amazing and I plan on getting some of this brands soap soon! :)
*Venus Embrace Razor Blade- Not sure why I put this in here. I like this razor so yeah haha.
*Rainwater Botanicals Dead Sea Mud  This is a little too drying as a all over mask for me but I might get it again and use it only on acne
* Aleia's Gluten Free Chocolate Chip Cookies- These are AMAZING!! The best gluten free cookie ever! (that I've tried) (post for these cookies )
*Rice Dream- This is my favorite milk of choice! Since it is rice, I'm gonna limit this to just a treat :)
* Traditional Medicinals Peppermint Tea- This was great! I loved making mint latte's with it!
Celestial Raspberry Tea- This was a very nice tea, but not as natural as I like.
Buddy Fruit Fruit snacks- Taste nice, but they are very gummy and sticky.
*Happy Squeeze Treat- Caramel Apple- I loved this!! It was like dessert in a gogo form!!
* Biotin- Not much to say about this. My hair was supper long though, I'm not sure if this is to thank for that though.
*Gummy Vitamin C- These are lovely! They taste great and a nice way to get vitamin c.
*Evening Primrose Oil- This stuff is great! If you're a female, you should be taking this!
*MultiVites-Gummies- these are very easy to take and yummy!

As for my spending-
I didn't buy anything I didn't need in June :D

Paleo- Breakfast, Lunch, Dinner, and Dessert!

Time for some more Paleo food! Instead of making different post' for all of these, I'm just putting it all in one! Here are some recipe's for Paleo Blueberry Pancakes,
Acorn Squash/Sweet Potato Squares, (with a side of green eggs)
Cucumber Tuna Salad,
Cod Fritters,
and Apple Berry Crumble

I saw these paleo blueberry pancakes on pinterest and they looked so good! (Original recipe- http://lmichellek.com/paleo-pancakes/)

Since I didn't have blueberries I used blackberry which worked fine for me.
I also added about 1 and a half tablespoons of almond milk after I made the first pancake, the batter was so thick and hard to use.

So they don't look like the picture of the recipe but they were actually really good! It's hard to find good paleo pancakes, so I might actually make these again!

Acorn Squash/Sweet Potato Squares-

I changed the original recipe a little.
Ingredients-
I used about a cup and 1/4 of cooked acorn squash
1 cup sweet potato,
1 banana
4 eggs,
lots of cinnamon,
and about 1/3 cup of applesauce
Coconut and cinnamon on top (add this when it's almost done so it doesn't burn)

Topping-
I blended about 5 blackberries,
4 strawberries,
and some lemon juice.

After blending, I strained it and cooked it on the stove and added about 2 teaspoons of coconut sugar.
I had this for breakfast with some green eggs!

Green Eggs-
I used my vitamix to blend up 2 raw eggs,
and a small handful of spinach
(if I had it I would have added) a few basil leaves.

Then just made them like scrambled eggs. I don't like the slimey-ness of cooked spinach so cooked this way there was none of that.

Cucumber Tuna Salad

I was searching Pinterest for a paleo cucumber tuna salad but didn't find anything! So I just made my own.

Ingredients-
3 to 5 small cucumbers (or just 1 big one) *IMPORTANT- After shredding the cucumbers use paper towels to get off the water from them or your salad will be VERY watery.
2 to 3 cans of tuna (I like a little more tuna than cucumber but you can add however much you want)
1 cup of halved grapes. (or less if you don't like as many)

for the dressing-
2 tablespoons of mayo (i used olive oil mayo)
a little less than a tablespoon brown mustard
1 teaspoon apple cider vinegar
1 teaspoon olive oil
salt and pepper

*Mix as little as possible so it doesn't turn to mush :P

Cod Fritters-
 (orginal recipe)

My mom actually changed this from the original recipe quite a bit but they. were. AMAZING! They taste just like 'normal fish sticks' but better in my opinion!

Ingredients-
1 pound cooked cod (about 2 cups)
a little less than a cup of cooked sweet potato
2 tablespoons coconut flour
2 eggs
1 tablespoon of  parsley and basil (it called for just parsley so we did half and half)
1 tablespoon dijon mustard

After mixing everything together we fried then in some coconut and olive oil.
I will be making these again for sure!
salt and pepper

Apple Berry Crumble-

Ingredients-
Filling-
3 cooked apples (cooked with cinnamon)
4 raw berries (I used black but I think raspberry would be amazing)
4 raw strawberries (I used raw berries so they didn't over cook with the apples)

Topping-
2 tablespoons coconut flour
1 tablespoon flax meal (or just ground flax, I think it's about the same)
1 tablespoon coconut sugar
a few dashes of cinnamon
about 1 tablespoon of coconut oil. I used a little less but it could have used a lil more to make it more 'crumbley'

Put the filling in a oven safe bowl,
Mix the topping up in a bowl or mug,
sprinkle on top and lightly press it down (very lightly)
Bake at 350 for about 15 to 20 minutes.
You'll know it's done when the filling is bubbling and the topping is lightly browned and crisped

I made a cream topping for this as well.

Ingredients-
2 tablespoons of coconut butter
1 tablespoon coconut milk (canned and chilled. use the thick milk from the top for this)
1 taspoon maple syrup
a dash of cinnamon

Use a max mixer to beat this and make it fluffy.

So there you have it. Hope it wasn't a paleo recipe overload :)

♡ June Favorites- Natural Skincare, Paleo, Games ♡

Time for my June favorites! :D

Rainwater Botaniclas Nourishing Facial Cream This is a nice thick moisturizer that is very rich but still light enough for morning, for me anyway.
Rainwater Botanicals Troubled Skin Serum I love this serum! It's a very light moisturizer that helps with acne (or any skin issues really) and smells lovely!

Fruit Puree- Yes it does look like baby food but it's AWESOME! This is my favorite one I made with cooked apple, banana, and pineapple. Then I just blended it and ate it warm :)
Strawberry Vegan Milkshake I love this! It's a perfect paleo sweet treat on hot days!

Sweet potatoes- I don't have a picture but I'm pretty sure everyone knows what a sweet potato looks like ;)

Games-
Candy crush,
Farmville 2 (both on facebook)

So that's it! It wasn't a lot of favorites for June but the few I did have were favorites for sure!
